Oliver's Gnocchi

If you are bored of dried pasta and want to make something delicious, that can be the base for so many ingredients when pan-fried with a little butter, then try Oliver's gnocchi recipe!

 

Ingredients:

1kg of red potatoes (we recommend Désirée or Red Rooster)

450g of 00 flour (you can use plain flour, it's just that 00 is a more refined pasta flour)

1/4 tsp of grated nutmeg

2 egg yolks & 1 whole egg

 

Method:

 

Pre-heat your oven to 200°

 

Bake the potatoes on a baking tray (with their skins on) for about 90 minutes. Once baked, remove from the oven and let them cool. When cool, cut open and scoop out middle in to bowl (you can discard the skins)

 

Mash the potato filling, adding your nutmeg and making sure to season well with salt & pepper. Then mix in the egg yolks and whole egg. Work the flour in gradually with your hands or a wooden spoon, until you make a soft dough.

 

Turn the dough out on to a clean floured surface and bring it all together, then taking hand sized pieces of dough one at a time, and roll them in to sausages. 

 

Cut the sausages into 2cm square pieces and place on to a floured tray, taking care that they don't stick together. Repeat until all of the dough is used up

 

Put a large pan of salted water on to the hob until it is simmering (do not let the water boil as this will cause the gnocchi to fall apart) and add the gnocchi in batches. 

 

Gnocchi is cooked when it rises to the surface, then count to 15 seconds and remove from the water with a slotted spoon, placing immediately in to ice-cold water.

 

Once all cooked, drain the gnocchi from the cold water and pan fry with a knob of butter and your choice of ingredients!

 

We cooked ours (after making it for the demo video) with chorizo, spring onion, blue cheese and grated cauliflower, it was delicious.
